|Course Title||Dental Hygiene III: Nutrition For The Dental Hygienist|
|Prerequisite(s)||DHYG 1904,1905 and DHYG 1915 with a "C" or better|
This course is a continuation of the roles and responsibilities of the dental hygienist with focus on nutrition and its relationship to general and oral health, and with an emphasis on oral preventive measures. N
|Expected Educational Results|
Upon successful completion of the course, the student will be able to:
1. Explain the role of nutrition in the synthesis and maintenance of the oral tissues
2. Name the classes of essential nutrients, their general function in the growth and development of oral tissues, and food sources of each nutrient.
3. Describe the role of diet in the initiation and progression of dental caries and periodontal disease.
4. Describe nutrition issues that may impact oral health throughout the life cycle.
5. Discuss dietary measures that may prevent or delay the onset of chronic diesase as well as oral diseases.
6. Explain dietary goals for people with chronic disease such as obesity, diabetes, hypertension, and cardiovascular disease and their potential to impact oral health.
7. Demonstrate appropriate nutrition assessment and dietary counseling techniques for the treatment of nutrtion-related dental diseases taking into consideration cultural, educational and psychological factors.
8. Describe the national nutritional standards and guidelines which ensure adequate human nutrition and health promotion.
9. Discuss the components of energy metabolism and explain the priciples for regulating energy balance.
10. Demonstrate the ability to perform a nutrition history and analysis utilizing The Food Guide Pyramid and computerized dietary analysis programs.
11. Identify food factors and eating patterns that may contribute to the development of caries.
12. Based upon a dietary assessment, identify educational needs and formulate dietary treatment plans for clients in different stages of the life cycle.
13. Demonstate communication skills necessary to be an effective dietary counselor.
|General Education Outcomes|
I. This course addresses the general education outcome relating to communications by requiring students to communicate professionally while using correct terminology.
II. This course addresses the general education outcome regarding problem-solving and critical thinking skills by students with patient case scenarios for which they must propose solutions. Students will be required to determine the patientís problem (s) and translate these into its diagnosis and corrective dental hygiene actions.
III. This course addresses the general education outcome of application of scientific inquiry by requiring students to synthesize hypothetical data regarding aspects of patient information into significant patient treatment data.
IV. This course addresses the general education outcome regarding basic concepts of wellness by encouraging students to grasp the wellness concepts which are promoted to their patients.
V. Applies the knowledge of personal, societal, and cultural development in a culturally diverse environment

The dental hygiene department maintains full accreditation by the Commission on Dental Accreditation; additionally by reporting students' pass rates for state/regional/national licensing exams, the department will be able to assess the effectiveness of this course as well as the whole curriculum.
USE OF ASSESSMENT FINDINGS
The faculty function as the curriculum committee, along with science department faculty, and, as necessary, faculty from other departments are used to assist in periodic reviews of the curriculum. The department also articulates with a Department Advisory Committee, composed of members from the practicing dental and dental hygiene community, to maintain a current picture of the needs of current graduates/practitioners.
